Best Thing For My Diet....Zach (plus a Healthy Guacamole recipe)

Let's start where the need for a diet starts, food. Zach is at that phase where my food looks better then his, even if it's the same thing. His own egg, "okay I'll eat a little, Mommy, but yours looks better."I started putting scallions in my omelet to add flavor (sometimes also tomatoes). "That's okay I'll eat around them Mommy." What he likes is eating on my lap so I made him his own today and he ate half of it on my lap. Then came my nuts. He LOVES my nuts so I always give him some too. The new thing is lunch though. He gets cold cuts and a roll, Mommy gets cold cuts on a salad (Low Fat or Fat Free Thousand Island Dressing). Lately, he'll eat the roll and some of his cold cuts then he'll decide to have some of Mommy's salad. How does a two year old like Thousand Island dressing? Luckily, I had ripped enough lettuce where I was still good for three hours but I had to eat big bites quickly for that to happen. I couldn't tell him "no" since I want him to love salad but the thing is, with all these meals, I kinda wished he ate his own food. I'll give him his own salad but it's not as much fun as mine. Cut back on calories, Check!

Here's the part where he is my Personal Trainer. He is a good walker that can get good distance so when we let him explore that usually equates to at least a mile of exercise. He knows how to get to my parent's house so sometimes, like later today, we walk there. Josh will drive him back home after dinner but I'll walk home for additional exercise. But he also loves to explore the neighborhood and doesn't stay close to home. Hills are fun for him as well. Plenty of exercise, Check!

He knows about the diet and watches me on the scale and measuring my waist. He gets on the scale after me. Here's the scary thought, he LOST two pounds since early June and his 2 year check up. He eats a lot (including carbs) and is very active. We let him run outside on nice nights after dinner until 8:30. That's bath time. See the Mommy's Chairs post for details. Now he's close to UNDERWEIGHT for his height especially since he just had a growth spurt. Nothin' I can do since he does eat a lot. At least he, for now, is still perfectly proportioned.

A lot of people know how to make guacamole but this is as healthy as possible. This Recipe is Nutritionist Approved:

Easy Guacamole
2 Avocados
1/2 a small onion
1/2 a small plum tomatoe
1/2 a juiced lime (or 1 tbsp lime juice)

 
Finely dice the onion into small squares (mostly)
Finely dice the tomato into small squares (mostly)
Peel the avocados
Cut the avocados into small pieces
Puree the avocados or mash until most if not all chunks are gone
Mix in the onion, tomato, and lime juice.
Store in fridge for at least 30 minutes before serving
