Easter/First Phone Conversation!!!/ SAY YES!!!

Easter

Zach had a great Easter. Come Easter morning he found three eggs shaped as chicks filled with Multigrain Cheerios and 3 M&M's. We also have a tradition from my family of less candy and a small gift. Zach's gift was a sand/water play set from Toys R Us. He had this set last year, couldn't let go of the shovel and rake. That meant with him crawling most of the summer the handle on the rake broke.

I had talked with my Nutritionist about what would be okay for me and the diet. She says it's important to respect holidays or the diet will never work. We settled on I can have 5 dark chocolate M&Ms and a little dessert at dinner. Our entire candy list was that one bag of dark chocolate M&Ms. Zach got one chick on Easter but Monday I wanted to just use it up so he got the remaining chick contents for breakfast. I was great with dessert sticking with an irresistable chocolate covered strawberry and a very small 1/2 inch thick piece of Oreo Cookie Cake. That and the five M&Ms were my only no-diet approved food.

After the baskets, I made my usual sunday morning (only) pancakes with 1 sausage link each then we went to Josh's parent's house. They got Zach a really cute ball to play with. He doesn't play with toys anymore just balls and the cones we got from Target that are supposed to be soccor goal posts. The website wouldn't let me post a picture but here's the link. He'll use those when he's older too.


At dinner he was very shy at first but then loosened up. He knows all the letters (but not the Alphabet Song) so he was showing off with a couple of alphabet puzzles he got from my parent's for Easter. He ate well then came home. But wasn't done.

Neighbors had their kids and five grandkids over. Their kids set up an egg hunt for their own kids. Zach saw the eggs being put out and crashed the hunt by chasing around the older kids while they were hunting. The kids (a little older then me) were very nice and let Zach keep an egg.


First Phone Conversation!!!


This was the cutest thing ever!!! Our upstairs neighbors work in a school but were off today. Around 4, they went to get their son from Day Care. Zach heard them leave and started yelling happily "Daddy" several times. I even opened the door to show him that Daddy still had about 45 minutes until he got home. That wasn't good enough. So I called Josh and warned him the Zach will be on the phone so he might accidentally get hung up on (and he did, twice but after a good amount of time).

Zach didn't know what to do but kept listening to Josh and saying "Daddy", "Hi, Daddy" I would prompt him with what we did today like walk around Target and he'd say "arget". It was the most precious thing to watch and listen too. Josh came home with a huge beaming smile. This is what makes families fabulous and Toddlers terrific.



SAY YES!!!

This won't be news to anyone who's ever parented a Toddler. He says "no" in a cute and calm voice quite often but doesn't say "yes". Even when "Yes" is the answer. "Do you like Taco's?" which is hands down his favorite dinner is met with silence.

While we were walking around Target today we practiced saying "Yes" and when that would be the answer so he can learn what it means. He was great when prompted but wouldn't just use it when it was the answer. Tonight he didn't even say the word when Josh got home even when prompted. So I told him that I won't cook dinner until he said, "yes" (15 - 20 minutes to cook a favorite Lemon Garlic Chicken, Peas, and Stove Top Cornbread Stuffing).

He just said "Ankees" and "fooball". Josh, who's getting hungry is prompting him like crazy "what channel are the Yankees on (YES Yankees Entertainment and Sports Network channel 64 here). Nothing. Finally, Zach caught on, If I say "yes" Mommy cooks. so he said yes and I raced to the kitchen. It took 10 minutes for him to finally say.

This is the leftovers. Usually, there isn't stuffing in the peas but I poured this out of the tupperware just for the picture. This is Josh's lunch for tomorrow.

Lemon Garlic Chicken

3 - 4 Chicken Breasts (1.15 - 1.25 pounds)
2 tsp. Garlic Salt (or Garlic Powder)
1/4 c. Lemon Juice (I use the Sicilia Squeeze)
2 tsp. Rosemary Spice
1/2 c. Canola Oil (or Olive Oil)


                            Cut all the fat off the chicken and cut it in 1/2 horizontally


                                  Cut those halves into either 3rds or 4ths depending on size vertically
                                 Put the oil into a skillet then add the chicken.
                                 Add 1 tsp of the Garlic, 1 tsp of the Rosemary, and 1/8c. lemon juice.
                                 Cook for 5 minutes then flip.
                                Add the rest of the Garlic, Rasemary, and lemon juice
                                Cook another 5 minutes then flip again.
                                Keep flipping until both sides are golden brown.
